DARK CHOCOLATE CANDY CANE COOKIES

A number of decades back, at my discount housewares shop, I was shopping around this time of year. I'm there so often they know me. If you have been around HomeSense (aka Homegoods from the US) you understand they've got an amazing choice of reduction bakeware, props (it is where I get the majority of my cake racks ), and normally all you could ever need for your dwelling. INGREDIENTS
  1. 1Z4 cup Dutch-processed cocoa powder
  2. 1/4 cup black cocoa powder
  3. 1 teaspoon baking soda
  4. 1 cup light-brown sugar packaged
  5. 2 eggs room temperature
  6. 1 teaspoon peppermint extract optional
  7. 1 tote Bright White Chocolate Melts or white chocolate, melted*
  8. Vegetable shortening as necessary to candy melts
  9. Crushed candy canes

DIRECTIONS
  1. In a medium bowlwhisk flour, cocoa powders, baking soda, and salt together. Put aside.
  2. From the bowl of a stand mixer, beat sugar and butter on med-high until soft and light (approx. 2-3mins). Reduce speed and add peppermint and egg extract. Beat until well blended. Add flour mixture and blend until blended.
  3. Preheat oven and line baking sheets.
  4. Utilizing a moderate cookie scoop, part bread on baking sheet (I'd 9 biscuits per sheet). Bake for about 10 mins, or till the centre is set. Cookies crinkle and will deflate somewhat .
  5. Cool on pans for 5 mins then move into a wire rack to cool completely.
  6. Pour melted candy melts or chocolate, then put on a parchment lined baking sheet and sprinkle with crushed candy canes. Let me set.
