BLUEBERRY PIE COOKIES

he plaques were little things growing on bushes close to the floor. They were not the large blueberries we all purchase in the grocery store.

Blueberry Pie Cookies

Ingredients

  1. 1 T. butter
  2. 1 pint (roughly 1 1/2 c.) fresh blueberries
  3. 1/4 c. water
  4. 1 T. cornstarch
  5. 1 tsp. Lemon juice
  6. pinch ground cinnamon
  7. Pinch salt

For Meeting:

  1. Pie crust store-bought, for a pie or use your favorite homemade recipe
  2. 1 large egg
  3. 1/4 tsp. water

Instructions

  1. Add cornstarch, sugar, water, blueberries, lemon juice, cinnamon, and salt. Stir to blend.
  2. Bring to a lightly boil over moderate. Put aside to cool.
  3. Transfer half the rounds into some baking sheet and brush the edges with a very small bit of water (this can help seal the rounds).
  4. Put approximately 1 and 1/2 measuring tsp of blueberry filling at the middle of every round (don't over-fill). Top each with a few. Press the edges to seal every pie cookie, then use a fork.
  5. An egg wash by beating 1/4 tsp of water and then the egg with.
  6. Brush every pie cookie make sure you find some egg wash over the surface of the cookiecutter. (Since these miniature pies will not be in the oven for so long as a full size dish, they do not create a well browned crust with no egg wash.
  7. If using sprinkle the tops with a pinch of granulated sugar or sugar. Use a knife to cut slits.
  8. Makes about 12-15 biscuits.
  9. These are really well, and delicious cold or warm.
