- tsp salt
- 2 large eggs
- Extract
- 1 1/3 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- Oats rolled
- 12 oz (1 package) package semi-sweet chocolate chips
Directions
- Preheat oven to 360 degrees F. I favor this particular oven temperature for many gourmet biscuits.
- In a mixing bowl cream the butter, salt, and sugars. Mix for a moment on medium for an extra minute.
- Mix on low speed until the eggs have been mixed in, then on medium for a moment and then on top for an extra minute. The mix ought to be fluffy and light yellow.
- Continuing on low rate, add the bread, together with the baking powder and baking soda, and mix until the flour disappears. Add the oats and blend on low only.
- Add the chocolate chips, coconut, and walnuts. Mix combined.
- Use a two oz (medium-sized) cookie scooper and set the dough on ungreased non-stick baking sheets about 2" apart. Press down the dough gently.
- Bake in a preheated oven for 10-12 minutes, or until the tops begin to crackle and are light brown.
- For more crispy oatmeal biscuits: Reduce the oats prior to baking and then press the dough down about half way.
- Serve warm or cool completely. These biscuits freeze well for up to 6 weeks.
