WHITE VELVET SUGAR COOKIES

These velvet sugar snacks that are white may be the softest sugar cookies you will ever meet which makes them AND perfect!



Entirely buried in my writings (I published about these wonderful white velvet sugar snacks waaaaay back in 2009 when life was different and my photos were so dreadful -- see bottom of the post for evidence ), these special and flavorful sugar cookies deserve just a little shout out.

Before those of you who have also acquired a strong devotion to my much-loved"favorite" sugar cookie recipe begin to dread and wonder and maybe riot, allow me to guarantee you that these white velvet sugar snacks exist within a sugar cookie cutter habitat their own.

YIELD: DEPENDING ON SIZE PREP TIME: 30 MINUTES COOK TIME: 10 MINUTES ADDITIONAL TIME: 2 HOURS TOTAL TIME: 2 HOURS 40 MINUTES, 2-3 DOZEN COOKIES

INGREDIENTS
  1. 8 oz package cream cheese
  2. 2 cups (15 oz ) granulated sugar
  3. 2 egg yolks
  4. 1 tsp vanilla extract
  5. 4 3/4 cups (23.75 oz ) all-purpose flour
  6. 1/4 tsp salt

directions
  1. In a large bowl using a handheld mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream the butter and cream cheese together scraping down the sides of the bowl.
  2. Add vanilla, egg yolk and the sugar. Mix well, yet another 1-2 minutes.
  3. Add salt and the flour. Mix until blended (do not overmix).
  4. Spread the dough into a rectangle that was thick onto a sheet of plastic wrap; pay.
  5. If the dough is too firm right from the fridge, allow it to rest at room temperature for 10-15 minutes prior to rolling (and put in there with some elbow grease to roll out it!) .

  2. These biscuits are tender and so tender - if they're overbaked watch however they will not be!
  3. For all you daredevils on the market, you can try removing the frightening measure and rolling them out immediately (I know, I know, I hate waiting, also ), however the dough has always been somewhat too sticky when I have attempted to hurry it.
