Cadbury Mini Egg Cookies
Okay, if there is 1 recipe that you will need to try out this spring, it is these Cadbury Mini Egg Cookies. Wow. Just wow. Mini Eggs have always been among my absolute favorite Easter chocolates. There with Easter Cream Eggs... Mmmm... There is something about the chocolate they use... it is entirely and completely addictive! When you place them within a cookie, then they are melt in your mouth delicious, particularly when they're hot and melty, straight from the oven. Yum!
No word of a lie however, these biscuits are AMAZING. They've a perfectly soft feel using a gentle, buttery flavour. Together with the yummy chocolate at the Mini Eggsthey are completely addictive. I was so eager to talk about them with the children when they got home.

Ingredients
- Two 1/4 cups bread
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cups sugar
- 2 tsp vanilla
- 2 eggs
- 11/2 cups Cadbury Mini Eggs, sliced in half
Directions
- Put aside.
- In a large bowlbeat together the sugar, butter, brown sugar and vanilla till creamy and smooth.
- Add the eggs and continue to beat until well blended.
- Insert the miniature eggs into the dough and lightly stir till they're blended into the soup.
- Drop spoonfuls of the dough on a parchment lined baking sheet.
- Bake at 375F for 10 to 12 minutes or till edges become gold.
