Peanut Butter Chocolate Meltaway Cookies -- to the chocolate and peanut butter enthusiast in your life! These little cookies aren't too sweet and receive a salty snack in the roasted peanuts.

All these are our biscuits that are back-to-school because all of the kids in our area are back to college. It looks every year, like the beginning of the school year comes, and I bet that the kids think!

ingredients

For Your cookie dough:
  1. 1/2 cup smooth peanut butter (I used Jiff manufacturer )
  2. 1 tsp vanilla extract
  3. 1/4 cup cornstarch
  4. 1/2 tsp salt
  5. 4 oz semi-sweet chocolate chopped
  6. 2 tbsp milk
  7. Butter
  8. Sugar

Directions
  1. On medium speed beat the butter in a mixing bowl until creamy. Insert 1/2 cup of sugar and beat until fluffy and light. Scrape down the sides of the bowl and mix until incorporated. Add the vanilla extract and blend until incorporated, scraping down sides with a spatula.
  2. In a small mixing bowlwhisk together the flour, cornstarch and salt. Add the flour mixture in 3 batches into the butter mixture. Blend is integrated.
  3. Preheat oven to 350F to bake the cookies. Scoop a level spoonful of bread with a cookie shovel. Roll into a ball and place onto the prepared baking sheet. Press each dough ball lightly with the flat base of a small glass or measuring cup, to the desired depth. Bake for 11 to 13 minutes in 350F or until lightly browned around the edges. Slide the parchment paper with cookies on a wire rack to cool. Repeat using a piece of paper set on a cookie sheet that was chilled.
  4. Combine the chopped chocolate, milk and peanut butter in a heatproof bowl set over a saucepan of gently simmering water (do not permit the water to touch the base of the bowl). Stir until the chocolate is totally melted and smooth. Switch the heat off but leave the pan. Add the sugar and stir till blended. The icing might seem slightly thin but it is going to harden and thicken. Immediately ice every cookie with about 1 teaspoon of the chocolate mix. Quickly sprinkle each cookie using chopped salted peanuts until the chocolate has an opportunity to set. Put on a wire rack and permit the icing to harden before storing snacks.
  5. Prep time Doesn't include the 1 hour chilling time for the dough
  6. To assist the icing remain at a fantastic spreadable consistency, maintain the bowl over the pan of warm water whilst icing the cookies.
