RED VELVET AND CHEESECAKE THUMBPRINT COOKIES
These velvet thumbprint cookies are tender and wealthy with the number of cheesecake filling. They're flavorful and festive!
We are not creating cakeso we have cocoa powder in these biscuits. However, the taste of those bad boys aren't anything about the cookie cutter, to be fair... it is about being a car for your filling. I feel like anybody who does not acknowledge that about velvet is a liar!

Here is how you create these cookies:
Ingredients
For the biscuits:
- 1/8 tsp salt
- 1 egg yolk
- 1 teaspoon vanilla extract
Red food coloring
- 2 tsp ginger powder
- 4 oz cream cheese
- 1 egg yolk
- 1/4 cup sugar
- 1/8 tsp salt
- 1/4 tsp vanilla
Instructions
- Prepare a baking sheet by lining it with a silicone baking mat or parchment paper.
- Beat the butter, brown sugar, egg yolk, vanilla and salt together until fluffy and light. Mix in food coloring, the flour, and cocoa powder until soft dough forms.
- Scoop out the dough by heaping tbsp and roll them into the sugar before putting on the prepared baking sheet (about 2 inches apart). Use the back of a round teaspoon to produce a little indentation.
- Make the filling: having food processor that is small or an electric mixer, beat the cream cheese, egg yolk, salt, sugar, and vanilla together .
- Use the back of a round teaspoon to soften the indentation from the biscuits. Bake for another 12 minutes, until filling is set.
- Let cool before serving. Store chilled and covered.
