PECAN PIE COOKIES
Pecan Pie Cookies are a simple cookie recipe that tastes like pecan pie! This brown sugar cookie is full of a pecan pie mix and therefore are fantastic for your vacation cookie platters.
Once Thanksgiving moves, I feel as if people overlook about pecan pie, but I do not. I understand folks are pie'd out December, but that is why turning my favourite pie right into a cookie is the best way to have that taste to Christmas...and all year long.

Pecan Pie Cookies are a simple cookie recipe that tastes like pecan pie! This brown sugar cookie is full of a pecan pie mix and therefore are fantastic for your vacation cookie platters!
INGREDIENTS
For Those COOKIES
- 1 cup brown sugar packed
- 3/4 cup unsalted butter softened
- 1 large egg
- 1 tsp vanilla
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup brown sugar packed
- 1 tsp vanilla
- Pinch salt
INSTRUCTIONS
- Beat brown sugar, egg, butter, and vanilla in medium speed (with a hand or stand mixer) until creamy. Beat until well blended.
- Shape dough into two tbsp balls. Place 2 inches apart on parchment lined cookie sheets. Create an indentation in each cookie with your thumb or the back of a wooden spoon, then rotate it into hollow out the cookie slightly.
- Add 2 tbsp whipping cream or milk. Stir until thick mix forms, including a little more milk or cream as required. (If you use milk, then you will need just about two tablespoons. Should you use cream you may desire more ) It needs to be too moist, only a thick mix.
- Bake for 10-12 minutes, or until the biscuits are baked and just beginning to turn gold.
- Store in an airtight container for up to three days or freeze up to a month.
