Lemon Butter Cookies

These biscuits have the best balance of sour and sweet. It is the cure.

ingredients

  1. 1 1/4 tsp. Baking powder
  2. 3/4 tsp. kosher salt
  3. 10 tbsp. butter, softened
  4. Block cream cheese
  5. 2 large eggs
  6. 2 tsp. Finely grated zest
  7. 1 tsp. Pure vanilla extract
  8. 10 drops food coloring
  9. Sugar

DIRECTIONS


  1. In a large bowl beat butter and cream cheese with sugar until fluffy and light . Beat in lemon zest, eggs and juice, vanilla, and food coloring. Beat in dry ingredients until just blended. Cover bowl with plastic and refrigerate until firm, at least two hours and up to overnight.
  2. Preheat oven and line a baking sheet. Let sit until sugar is consumed, then reroll in powdered sugar (don't shake off excess). Place about 2" apart on prepared baking sheet and bake until biscuits crackle and so are set but still slightly soft at the middle, 18 to 20 minutes. Transfer to a cooling rack and let cool.
