INGREDIENTS

  4. 1/2 cup Erythritol (up to 3/4 cup if you enjoy them really sweet)
  5. 3 cup Blanched almond milk

INSTRUCTIONS
  1. Line a cookie sheet with parchment paper.
  2. Till it is fluffy and light, use a hand mixer or stand mixer to beat together the butter, cream cheese, and erythritol.
  3. Beat in the almond milk, 1/2 cup (64 g) in a time. (The dough will be dense and somewhat crumbly, but must adhere when pressed )
  4. Use a moderate cookie scoop (approximately 1 1/2 tablespoon, 22 mL quantity ) to scoop balls of the dough on the cookie sheet. Flatten with your own hands.
  5. Bake for approximately 15 minutes, until the edges are golden. Allow to cool completely in the pan before tackling (biscuits will harden as they cool).
