Cinnamon Sugar Pillow Cookies


Beautiful and soft sugar pillow biscuits -- having a surprise filling!
The winner is the individual who crams the maximum cookie-baking to this one. Or actually... the actual winner is the person who eats the many biscuits.

These soft and light homemade sugar snacks are a huge hit with non-vegans and vegans, plus they are the ideal vacation cookie. But if you do need to send them I advise so that you may keep some for yourself, making extra!

Overall Time Yield: 15-20 biscuits

Ingredients

  1. 1/2 tsp salt
  2. 1/2 cup sugar, unrefined if desirable, or xylitol
  3. 1 1/2 tablespoon milk of alternative
  4. 1 teaspoon pure vanilla extract
  5. Parts cinnamon xylitol + sugar, if wanted for coating

Directions

  1. For your filling (which you may omit if you would like non-stuffed biscuits ), mix 4 teaspoon powdered sugar or Sugar-Free Powdered Sugar using 1/4 cup cream cheese (like TJ's vegan), lightly warmed or attracted to room temperature so that it's soft enough to stir or overcome together with the powdered sugar till smooth.
  2. Stir in the oil, milk, and vanilla dough. If it is still dry after a minute of stirring, Simply add milk. (I have never needed to include over the 1 1/2 tablespoons milk ) Smush to a ball with your hands, or transfer dough when the dough is within the bag, and smush to a ball. Roll into balls. Divide balls sew each half a piece and add a filling then put the other half on re-roll and top. Chill up to some day or 30 minutes. Once you take them outside, so let them cool about ten minutes on the skillet they will look underdone and they'll firm up as they cool.
